Ingredients

  • 1 cup 15 bean mix
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse the 15 bean mix and soak overnight.
  2. In a large pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for 1 more minute.
  4. Drain beans and add them to the pot.
  5. Add vegetable broth and diced tomatoes.
  6. Stir in cumin, paprika, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Adjust seasoning as needed before serving.

Notes

  • For a thicker soup, mash some beans after cooking.
