Quick and easy air fryer coconut shrimp recipe.

- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a shallow bowl, mix flour, garlic powder, salt, black pepper, and paprika.
- In another bowl, whisk the eggs.
- In a third bowl, combine shredded coconut and panko breadcrumbs.
- Coat each shrimp in the flour mixture, then dip in the egg, and finally coat with the coconut and panko mixture.
- Place the coated shrimp in a single layer in the air fryer basket.
- Spray the shrimp lightly with cooking spray.
- Cook for 8-10 minutes, flipping halfway through, until golden brown.
- Remove from the air fryer and serve immediately.
Notes
- For added flavor, marinate shrimp in lime juice for 15 minutes before coating.
- Serve with a sweet chili sauce for dipping.
- Experiment with spices in the flour mixture for variety.
