Quick and easy air fryer coconut shrimp recipe.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow bowl, mix flour, garlic powder, salt, black pepper, and paprika.
  3. In another bowl, whisk the eggs.
  4. In a third bowl, combine shredded coconut and panko breadcrumbs.
  5. Coat each shrimp in the flour mixture, then dip in the egg, and finally coat with the coconut and panko mixture.
  6. Place the coated shrimp in a single layer in the air fryer basket.
  7. Spray the shrimp lightly with cooking spray.
  8. Cook for 8-10 minutes, flipping halfway through, until golden brown.
  9. Remove from the air fryer and serve immediately.

Notes

  • For added flavor, marinate shrimp in lime juice for 15 minutes before coating.
  • Serve with a sweet chili sauce for dipping.
