Ingredients

- 1 medium eggplant, cut into fries
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten

Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip eggplant fries in the beaten eggs, then coat with the breadcrumb mixture.
- Arrange coated fries in a single layer in the air fryer basket.
- Lightly spray fries with olive oil.
- Air fry for 12-15 minutes, shaking the basket halfway through.
- Remove fries when golden brown and crispy.
- Serve immediately with your choice of dipping sauce.
