Quick and flavorful stuffed bell peppers made in the air fryer.
Ingredients

- 4 medium bell peppers
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro for garnish
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, cumin, paprika, salt, and pepper.
- Stuff each bell pepper with the quinoa mixture.
- Top with shredded cheese.
- Place stuffed peppers in the air fryer basket.
- Cook for 12-15 minutes until peppers are tender and cheese is melted.
- Garnish with fresh cilantro before serving.

- Experiment with different types of cheese.
- Add diced tomatoes for extra flavor.
