- 1 lb shrimp, peeled and deveined
- 1 cup quinoa
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add shrimp, chili powder, lime juice, salt, and pepper.
- Cook shrimp until pink and cooked through, about 4-5 minutes.
- Serve shrimp over quinoa and garnish with cilantro.
