Achiote chicken grilled with Mexican flavors for a vibrant taste.


Ingredients

  • 2 lbs chicken thighs
  • 3 tablespoons achiote paste
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, mix achiote paste, orange juice, lime juice, garlic, cumin, salt, and pepper.
  2. Add chicken thighs to the marinade and coat well.
  3. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat the grill to medium-high heat.
  5. Remove chicken from marinade and discard excess marinade.
  6. Grill chicken for 6-7 minutes on each side or until cooked through.
  7. Let chicken rest for a few minutes before slicing.
