Ingredients

- 2 lbs chicken thighs
- 3 tablespoons achiote paste
- 1/4 cup orange juice
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, mix achiote paste, orange juice, lime juice, garlic, cumin, salt, and pepper.
- Add chicken thighs to the marinade and coat well.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and discard excess marinade.
- Grill chicken for 6-7 minutes on each side or until cooked through.
- Let chicken rest for a few minutes before slicing.
Notes
- Serve with rice and beans for a complete meal.
- Garnish with fresh cilantro and lime wedges.
