Ingredients

  • 1 can (14 oz) diced tomatoes
  • 1 cup peanut butter
  • 4 cups chicken broth
  • 2 cups sweet potatoes, diced
  • 1 cup spinach
  • 2 tablespoons vegetable oil
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add chicken pieces and brown on all sides.
  4. Stir in diced tomatoes and peanut butter until combined.
  5. Add chicken broth, sweet potatoes, cayenne, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Stir in spinach and cook for an additional 5 minutes.
