Ingredients

- 1 medium turkey (12–14 lbs)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 4 cups vegetable broth
- 2 cups cauliflower, riced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the turkey dry with paper towels.
- Rub olive oil, salt, and pepper all over the turkey.
- Place the turkey in a roasting pan.
- Pour vegetable broth around the turkey.
- Roast the turkey for about 3 hours, basting every 30 minutes.
- In the last hour, add riced cauliflower, diced carrots, and celery around the turkey.
- Add fresh rosemary and thyme to the vegetables.
- Check the internal temperature of the turkey; it should reach 165°F (75°C).
- Let the turkey rest for 20 minutes before carving.
Notes
- Make sure to use AIP-approved spices.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Adjust cooking time based on turkey size.
