  • 4 cups vegetable broth
  • 2 cups cauliflower, riced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the turkey dry with paper towels.
  3. Rub olive oil, salt, and pepper all over the turkey.
  4. Place the turkey in a roasting pan.
  5. Pour vegetable broth around the turkey.
  6. Roast the turkey for about 3 hours, basting every 30 minutes.
  7. In the last hour, add riced cauliflower, diced carrots, and celery around the turkey.
  8. Add fresh rosemary and thyme to the vegetables.
  9. Check the internal temperature of the turkey; it should reach 165°F (75°C).
  10. Let the turkey rest for 20 minutes before carving.
