- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon almond extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup almonds, chopped
Instructions
- Preheat your air fryer to 320°F (160°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs and almond extract, mixing until well combined.
- Sift together the flour, baking powder, and salt, then gradually add to the wet mixture.
- Fold in the chopped almonds.
- Divide the dough in half and shape into two logs, about 12 inches long and 2 inches wide.
- Place each log in the air fryer basket and cook for 20 minutes.
- Remove and let cool for 10 minutes, then slice the logs diagonally into 1/2 inch pieces.
- Return the biscotti to the air fryer and cook for an additional 7 minutes, flipping halfway through.
- Let cool completely before serving.
