Ingredients

- 4 large eggs
- 1/2 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup cooked sausage or bacon, crumbled
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking spray
Instructions
- In a bowl, whisk together eggs, salt, and pepper.
- In a skillet over medium heat, sauté bell peppers and onions until soft.
- Add cooked sausage or bacon to the skillet and mix well.
- Pour the egg mixture into the skillet and cook until just set, stirring frequently.
- Remove from heat and stir in cheese until melted.
- Lay out tortillas and spoon the egg mixture evenly onto each.
- Roll tortillas tightly into burritos.
- Spray air fryer basket with cooking spray.
- Place burritos seam-side down in the basket, ensuring they do not touch.
- Cook at 350°F for 8-10 minutes, flipping halfway through, until golden brown.
- Remove and let cool for a few minutes before serving.
