Ingredients

  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup cooked sausage or bacon, crumbled
  • 4 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together eggs, salt, and pepper.
  2. In a skillet over medium heat, sauté bell peppers and onions until soft.
  3. Add cooked sausage or bacon to the skillet and mix well.
  4. Pour the egg mixture into the skillet and cook until just set, stirring frequently.
  5. Remove from heat and stir in cheese until melted.
  6. Lay out tortillas and spoon the egg mixture evenly onto each.
  7. Roll tortillas tightly into burritos.
  8. Spray air fryer basket with cooking spray.
  9. Place burritos seam-side down in the basket, ensuring they do not touch.
  10. Cook at 350°F for 8-10 minutes, flipping halfway through, until golden brown.
