Description

A delicious air fryer breakfast quesadilla filled with eggs, cheese, and your choice of meats and vegetables.


Ingredients

  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 flour tortillas
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper.
  2. Add the cooked sausage, bell peppers, green onions, and cheese to the egg mixture.
  3. Heat the air fryer to 350°F (175°C).
  4. Spray one side of each tortilla with cooking spray.
  5. Place one tortilla, sprayed side down, in the air fryer basket.
  6. Spread the egg mixture evenly over the tortilla.
  7. Top with the second tortilla, sprayed side up.
  8. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  9. Remove from the air fryer and let cool slightly before slicing.
  10. Serve with salsa or avocado if desired.
