A delicious air fryer breakfast quesadilla filled with eggs, cheese, and your choice of meats and vegetables.

- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 2 flour tortillas
- 1/2 cup cooked and crumbled breakfast sausage or bacon
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Cooking spray
Instructions
- In a bowl, whisk together the eggs, salt, and pepper.
- Add the cooked sausage, bell peppers, green onions, and cheese to the egg mixture.
- Heat the air fryer to 350°F (175°C).
- Spray one side of each tortilla with cooking spray.
- Place one tortilla, sprayed side down, in the air fryer basket.
- Spread the egg mixture evenly over the tortilla.
- Top with the second tortilla, sprayed side up.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before slicing.
- Serve with salsa or avocado if desired.
