This air fryer caprese stuffed chicken breast recipe combines juicy chicken with fresh mozzarella, tomatoes, and basil for a flavorful dish.

- 2 large chicken breasts
- 1 cup fresh mozzarella cheese, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, combine mozzarella, tomatoes, basil, balsamic vinegar, salt, and pepper.
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each pocket with the mozzarella mixture.
- Rub the outside of the chicken with olive oil, garlic powder, onion powder, salt, and pepper.
- Place the stuffed chicken breasts in the air fryer basket.
- Cook for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing.
Notes
- For a spicy kick, add crushed red pepper flakes to the stuffing.
- Garnish with additional basil and a drizzle of balsamic reduction for plating.
