This air fryer caprese stuffed chicken breast recipe combines juicy chicken with fresh mozzarella, tomatoes, and basil for a flavorful dish.


Ingredients

  • 2 large chicken breasts
  • 1 cup fresh mozzarella cheese, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, combine mozzarella, tomatoes, basil, balsamic vinegar, salt, and pepper.
  3. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each pocket with the mozzarella mixture.
  5. Rub the outside of the chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  6. Place the stuffed chicken breasts in the air fryer basket.
  7. Cook for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before slicing.

Notes

  • For a spicy kick, add crushed red pepper flakes to the stuffing.
  • Garnish with additional basil and a drizzle of balsamic reduction for plating.
