Description
Air fryer carrot cake bites are a delightful twist on traditional carrot cake. They are moist, flavorful, and easy to prepare in an air fryer.
Ingredients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1/4 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a large bowl, combine the grated carrots, flour, brown sugar, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
- In a separate bowl, whisk together the oil, buttermilk, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix until just combined. Fold in walnuts and raisins if using.
- Grease a silicone mold or tray that fits in your air fryer.
- Fill the mold with the batter, about two-thirds full.
- Place the mold in the air fryer basket and cook for 10-12 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the air fryer and let cool for a few minutes before transferring to a wire rack.
Notes
- For a different flavor, add 1/4 teaspoon of nutmeg.
- Top with cream cheese frosting for added sweetness.
- Store leftovers in an airtight container for up to 3 days.
