A flavorful air fryer chimichurri chicken breast recipe that combines juicy chicken with a zesty chimichurri sauce.

- 2 boneless chicken breasts (6–8 oz each)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, and pepper to create chimichurri sauce.
- Marinate chicken breasts in half of the chimichurri sauce for at least 30 minutes.
- Place marinated chicken breasts in the air fryer basket.
- Cook for 12-15 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
- Remove chicken and let rest for 5 minutes.
- Serve with remaining chimichurri sauce drizzled on top.
Notes
- For a spicier chimichurri, increase red pepper flakes.
- Let the chicken rest for better juiciness.
