Ingredients

  • 2 boneless chicken breasts (68 oz each)
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, and pepper to create chimichurri sauce.
  3. Marinate chicken breasts in half of the chimichurri sauce for at least 30 minutes.
  4. Place marinated chicken breasts in the air fryer basket.
  5. Cook for 12-15 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
  6. Remove chicken and let rest for 5 minutes.
  7. Serve with remaining chimichurri sauce drizzled on top.
