Ingredients

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth.
  2. Melt chocolate chips with coconut oil in a microwave or double boiler.
  3. In silicone cupcake molds, add a layer of melted chocolate, spreading it evenly.
  4. Chill molds in the freezer for 10 minutes.
  5. Add a layer of the peanut butter mixture on top of the chilled chocolate.
  6. Cover with more melted chocolate and smooth the top.
  7. Chill again for 30 minutes until set.
  8. Remove from molds and serve.
