- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth.
- Melt chocolate chips with coconut oil in a microwave or double boiler.
- In silicone cupcake molds, add a layer of melted chocolate, spreading it evenly.
- Chill molds in the freezer for 10 minutes.
- Add a layer of the peanut butter mixture on top of the chilled chocolate.
- Cover with more melted chocolate and smooth the top.
- Chill again for 30 minutes until set.
- Remove from molds and serve.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Experiment with dark chocolate for a richer flavor.
- For added texture, mix chopped nuts into the peanut butter layer.
