Description
Mini low carb pizzas made with air fryer eggplant.
Ingredients

- 1 medium eggplant, sliced into 1/2 inch rounds
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced black olives
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplant into rounds and sprinkle with salt. Let it sit for 20 minutes to draw out moisture.
- Pat the eggplant slices dry with a paper towel.
- Spread marinara sauce on each eggplant slice.
- Top with mozzarella cheese, olives, and Parmesan cheese.
- Sprinkle Italian seasoning over the toppings.
- Arrange the eggplant slices in the air fryer basket in a single layer.
- Cook for 10-12 minutes or until the cheese is bubbly and golden.
- Remove from the air fryer and let cool slightly before serving.
Notes
- For added flavor, brush eggplant slices with olive oil before adding toppings.
- Experiment with different toppings like pepperoni or bell peppers.
- Serve with fresh basil for garnish.
