Crispy air fryer falafel wrap bites made with chickpeas and fresh herbs.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup flour
  • 1 tbsp olive oil
  • 4 small tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup tomatoes, diced
  • 1/4 cup tahini sauce

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, paprika, salt, and pepper. Pulse until combined.
  3. Add flour and mix until a dough forms.
  4. Shape mixture into small balls or patties.
  5. Brush with olive oil and place in the air fryer basket.
  6. Cook for 10-12 minutes, shaking halfway through.
  7. Warm tortillas in a pan.
  8. Assemble wraps with lettuce, tomatoes, and falafel bites.
  9. Drizzle with tahini sauce and serve.
