Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. In a bowl, mix the flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, lemon juice, and lemon zest to the butter mixture; combine well.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into a greased baking pan that fits your air fryer.
  7. Place the pan in the air fryer basket and cook for 15-18 minutes, or until a toothpick comes out clean.
  8. Allow to cool before cutting into squares.
