Description

Deliciously crispy air fryer potato skins appetizer.


Ingredients

Scale
  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Scrub the potatoes and pierce them with a fork several times.
  3. Cook the potatoes in the air fryer for 35-40 minutes until tender.
  4. Let the potatoes cool slightly, then cut them in half and scoop out some flesh, leaving a thin layer.
  5. Brush the potato skins with olive oil and season with salt and pepper.
  6. Place the skins back in the air fryer and cook for another 10 minutes until crispy.
  7. Remove the skins and fill each with cheese and bacon.
  8. Return to the air fryer for an additional 5 minutes to melt the cheese.
  9. Top with sour cream and green onions before serving.

Notes

  • For a vegetarian option, omit the bacon.
