Deliciously crispy air fryer potato skins appetizer.
Ingredients

- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, sliced
Instructions
- Preheat your air fryer to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork several times.
- Cook the potatoes in the air fryer for 35-40 minutes until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some flesh, leaving a thin layer.
- Brush the potato skins with olive oil and season with salt and pepper.
- Place the skins back in the air fryer and cook for another 10 minutes until crispy.
- Remove the skins and fill each with cheese and bacon.
- Return to the air fryer for an additional 5 minutes to melt the cheese.
- Top with sour cream and green onions before serving.
Notes
- For a vegetarian option, omit the bacon.
- Experiment with different cheeses like mozzarella or gouda.
- Serve with a side of salsa or guacamole for added flavor.
