Crispy air fryer spring rolls made with a flavorful filling and a perfect golden crust.
Ingredients

- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1/2 cup sliced bell peppers
- 1/2 cup cooked shrimp, chopped
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 20 spring roll wrappers
- Cooking spray
Instructions
- In a large bowl, combine cabbage, carrots, bell peppers, shrimp, green onions, garlic, soy sauce, and sesame oil.
- Mix well to ensure even distribution of flavors.
- Take one spring roll wrapper and place it on a clean surface with a corner facing you.
- Place 2 tablespoons of filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold the sides inward.
- Roll the wrapper tightly and seal the top corner with a bit of water.
- Repeat with remaining wrappers and filling.
- Preheat the air fryer to 375°F (190°C).
- Spray the air fryer basket with cooking spray.
- Place spring rolls in a single layer in the basket, making sure they do not touch.
- Spray the tops of the spring rolls with cooking spray.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with dipping sauce of your choice.
Notes
- For a vegetarian option, substitute shrimp with tofu.
- Experiment with different types of vegetables for variety.
- Serve with sweet chili sauce or soy sauce for dipping.
