A delightful air fryer strawberry shortcake that combines the sweetness of strawberries with a light, fluffy biscuit.

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 2 tablespoons brown sugar
- 1 cup whipped cream
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix flour, granulated sugar, baking powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add heavy cream and vanilla extract; stir until just combined.
- Turn the dough onto a floured surface and knead gently; shape into a disk.
- Cut out biscuits using a cutter and place them in the air fryer basket.
- Air fry for 10-12 minutes until golden brown.
- While biscuits are cooking, macerate strawberries with brown sugar; let sit for 10 minutes.
- Once biscuits are done, let them cool slightly.
- Assemble by splitting biscuits, adding strawberries and whipped cream, then topping with the other half.
Notes
- For a richer flavor, substitute half of the heavy cream with sour cream.
- Experiment with different berries, such as blueberries or raspberries.
- Serve with a drizzle of chocolate sauce for added indulgence.
