- 4 bell peppers (any color)
- 1 cup cooked quinoa
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, frozen or fresh
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a bowl, combine quinoa, black beans, corn, cumin, smoked paprika, cheese, salt, and pepper.
- Stuff each bell pepper with the filling mixture.
- Lightly spray the stuffed peppers with olive oil.
- Place the peppers in the air fryer basket, making sure they are not overcrowded.
- Cook for 10-12 minutes until the peppers are tender and the cheese is melted.
- Remove from air fryer and let cool slightly before serving.
Notes
- You can use ground meat or turkey as a variation instead of beans.
- Garnish with fresh cilantro or parsley for added flavor.
- Adjust the spices according to your heat preference.
