- 1 can black beans, drained and rinsed

- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff each bell pepper with the quinoa mixture, packing tightly.
- Top each pepper with shredded cheese.
- Place stuffed peppers in the air fryer basket.
- Cook for 10-12 minutes, or until peppers are tender and cheese is melted.
- Let cool for a few minutes before serving.
