- 4 chicken fillets (about 1.5 lbs)
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon red pepper flakes
- 1 tablespoon sesame oil
- Chopped green onions for garnish
- Chopped peanuts for garnish
Instructions
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, ginger, red pepper flakes, and sesame oil to create the marinade.
- Place chicken fillets in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
- Preheat the air fryer to 375°F (190°C).
- Remove chicken from the marinade and shake off excess. Place fillets in the air fryer basket in a single layer.
- Cook for 15-20 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F (75°C).
- Let chicken rest for 5 minutes before slicing.
- Garnish with chopped green onions and peanuts before serving.
Notes
- For extra heat, add more red pepper flakes.
- Pair with jasmine rice or a fresh salad.
