- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup onion, diced
- 1/2 cup shredded cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, whisk the eggs, salt, and pepper until well combined.
- Add the chopped vegetables and cheese to the egg mixture.
- Grease the air fryer pan with olive oil.
- Pour the mixture into the air fryer pan.
- Cook for 10-12 minutes or until the eggs are set and the top is slightly golden.
- Remove the pan and let it cool for a few minutes before slicing.
- Serve warm, garnished with fresh herbs if desired.

- Feel free to add other vegetables such as zucchini or mushrooms.
- Use different types of cheese for varied flavors.
- For a spicy kick, add diced jalapeños.
