Ingredients

- 2 medium zucchinis
- 1 cup ground beef
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center to create boats.
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for 2-3 minutes.
- Remove from heat and mix in mozzarella and Parmesan cheese.
- Fill each zucchini boat with the meat and cheese mixture.
- Place the stuffed zucchini in the air fryer basket in a single layer.
- Cook for 10-12 minutes until the zucchinis are tender and cheese is melted.
- Remove from the air fryer and let cool slightly before serving.

- Add herbs like basil or parsley for extra flavor.
- Top with breadcrumbs for added texture if desired.
