Ingredients

  • 1 cup ground beef
  • 1/2 cup shredded mozzarella cheese

  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  4. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for 2-3 minutes.
  5. Remove from heat and mix in mozzarella and Parmesan cheese.
  6. Fill each zucchini boat with the meat and cheese mixture.
  7. Place the stuffed zucchini in the air fryer basket in a single layer.
  8. Cook for 10-12 minutes until the zucchinis are tender and cheese is melted.
  9. Remove from the air fryer and let cool slightly before serving.
