Ingredients

- 2 large cucumbers, diced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Wash and dice the cucumbers.
- Chop the red and yellow bell peppers.
- Thinly slice the red onion.
- In a large bowl, combine cucumbers, peppers, onion, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill for 30 minutes before serving.
