Tender short ribs braised in apple cider for a rich flavor.


Ingredients

  • 3 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 sprigs thyme
  • 1 bay leaf

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sear the short ribs on all sides until browned.
  5. Remove short ribs and set aside.
  6. Add onion, garlic, and carrots to the pot. Sauté until softened.
  7. Pour in the apple cider and bring to a simmer.
  8. Return short ribs to the pot, add thyme and bay leaf.
  9. Cover and transfer to the oven.
  10. Cook for 3 hours or until the meat is tender.
