Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
- Pour the cheesecake mixture over the crust in the springform pan.
- In a separate bowl, mix the sliced apples with brown sugar, cinnamon, and lemon juice. Layer the apple mixture over the cheesecake filling.
- For the topping, combine oats, flour, brown sugar, and melted butter. Sprinkle this mixture evenly over the apples.
- Bake for 60-70 minutes, or until the center is set and the topping is golden brown.
- Let it cool completely before removing from the springform pan. Chill in the refrigerator for at least 4 hours before serving.
