- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 pound chicken thighs, diced
- 1 pound shrimp, peeled and deveined
- 6 cups chicken broth
- 2 cups okra, sliced
- 2 tablespoons Cajun seasoning
- 2 bay leaves
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large pot, heat oil over medium heat.
- Add flour to make a roux, stirring constantly until it turns dark brown.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Add sausage and chicken. Cook until browned.
- Pour in chicken broth and bring to a boil.
- Add okra, Cajun seasoning, bay leaves, salt, and pepper.
- Reduce heat and simmer for 1 hour.
- Stir in shrimp and cook for an additional 10 minutes.
- Remove bay leaves before serving.
- Serve over cooked rice.
