Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add flour to make a roux, stirring constantly until it turns dark brown.
  3. Add onion, bell pepper, celery, and garlic. Cook until softened.
  4. Add sausage and chicken. Cook until browned.
  5. Pour in chicken broth and bring to a boil.
  6. Add okra, Cajun seasoning, bay leaves, salt, and pepper.
  7. Reduce heat and simmer for 1 hour.
  8. Stir in shrimp and cook for an additional 10 minutes.
  9. Remove bay leaves before serving.
