- 2 pounds potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced

- 1 cup vegetable broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper.
- Add the potato wedges and toss to coat evenly.
- Place the potatoes in a baking dish and pour the vegetable broth around them.
- Bake for 45-50 minutes, turning occasionally, until golden brown and tender.
- Serve warm, garnished with fresh herbs if desired.
