Instructions
- Toast the sourdough bread until golden brown.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Add a splash of vinegar to the water to help the eggs hold their shape.
- Crack each egg into a small bowl, then gently slide them into the simmering water.
- Poach the eggs for about 3-4 minutes for a runny yolk.
- Remove the eggs with a slotted spoon and drain on paper towels.
- Meanwhile, mash the avocado in a bowl, adding salt, pepper, and lemon juice to taste.
- Spread the avocado mixture evenly on the toasted bread.
- Top each slice with a poached egg.
- Sprinkle with red pepper flakes if desired and serve immediately.
