Baileys cheesecake is a rich, creamy dessert with a hint of Irish cream flavor.
Ingredients

- 200g digestive biscuits
- 100g unsalted butter, melted
- 400g cream cheese
- 100g powdered sugar
- 200ml Baileys Irish Cream
- 300ml heavy cream
- 2 teaspoons vanilla extract
- 1 tablespoon gelatin
- 3 tablespoons cold water
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits and mix with melted butter.
- Press the mixture into the bottom of a springform pan.
- In a bowl, beat the cream cheese and powdered sugar until smooth.
- Add in Baileys and vanilla extract, mix well.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Dissolve gelatin in cold water, then add to the mixture.
- Pour the filling onto the biscuit base.
- Chill in the refrigerator for at least 4 hours or until set.
- Serve chilled and enjoy.
