A rich and creamy Baileys Irish Cream cheesecake with a chocolate cookie crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup Baileys Irish Cream
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/4 cup all-purpose flour
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine chocolate cookie crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add granulated sugar and mix until well combined.
- Incorporate Baileys Irish Cream, mixing thoroughly.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, sour cream, and flour until smooth.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with chocolate shavings.
Notes
- For a stronger flavor, increase the Baileys by 1/4 cup.
- Try using different cookie types for the crust, such as graham crackers or digestive biscuits.
- Serve with whipped cream for added richness.
