  • 1 cup granulated sugar
  • 1 cup Baileys Irish Cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine chocolate cookie crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese until smooth.
  4. Add granulated sugar and mix until well combined.
  5. Incorporate Baileys Irish Cream, mixing thoroughly.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in vanilla extract, sour cream, and flour until smooth.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  10. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from the oven and refrigerate for at least 4 hours or overnight.
  12. Before serving, garnish with chocolate shavings.
