Ingredients

- 2 pounds of baby potatoes
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, diced
Instructions
- Boil the baby potatoes until tender.
- Drain and let them cool.
- In a bowl, mix balsamic vinegar, olive oil, salt, and pepper.
- Cut the potatoes in halves or quarters.
- Add potatoes, parsley, and red onion to the dressing.
- Toss to combine.
- Chill for at least 30 minutes before serving.

- Use any type of potatoes you like.
- Adjust the seasoning to your taste.
