  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix mashed bananas and pumpkin puree.
  3. Add sugar, oil, and eggs. Mix well.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
  5. Gradually add dry ingredients to the wet mixture. Stir until just combined.
  6. If using, fold in chopped nuts.
  7. Pour batter into greased muffin tin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
