Description
A healthy banana bread recipe using wholemeal flour and dried fruit.
Ingredients

- 3 ripe bananas, mashed
- 1 cup wholemeal flour
- 1/2 cup sugar
- 1/4 cup butter, melted
- 2 eggs
- 1/2 cup dried fruit (raisins, cranberries, or apricots)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix mashed bananas and melted butter.
- Add sugar, eggs, and vanilla extract. Stir well.
- In another bowl, combine wholemeal flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture.
- Fold in the dried fruit.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container.
- Can be frozen for up to 3 months.
- Use any dried fruit you prefer.
