Healthy banana oatmeal high protein breakfast cookies.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the bananas until smooth.
  3. Add rolled oats, protein powder, almond butter, honey, vanilla extract, baking soda, and salt. Mix well.
  4. If using, fold in chocolate chips.
  5. Drop spoonfuls of the mixture onto a lined baking sheet.
  6. Bake for 10-12 minutes until cookies are golden.
  7. Let cool before serving.

  • Store cookies in an airtight container.
  • Cookies can be frozen for longer shelf life.
