Healthy banana oatmeal high protein breakfast cookies.
Ingredients

- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup almond butter
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add rolled oats, protein powder, almond butter, honey, vanilla extract, baking soda, and salt. Mix well.
- If using, fold in chocolate chips.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Bake for 10-12 minutes until cookies are golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Cookies can be frozen for longer shelf life.
- Adjust sweetness by adding more or less honey.
