A hearty beef Lombardi casserole with layers of flavor.
Ingredients

- 1 lb ground beef
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz)
- 1 cup elbow macaroni
- 1 onion, chopped
- 2 cups cheese, shredded
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Brown the ground beef in a skillet over medium heat.
- Add onion and cook until soft.
- Stir in tomatoes, beans, macaroni, garlic powder, chili powder, salt, and pepper.
- Simmer for 10 minutes.
- Transfer mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25 minutes or until cheese is bubbly.

- Serve with a side salad.
- Can substitute ground turkey for a leaner option.
- Store leftovers in an airtight container.
