Description
A classic beef wellington recipe featuring tender beef wrapped in puff pastry.
Ingredients

- 2 lb beef tenderloin
- 1 lb mushrooms, finely chopped
- 8 oz pâté
- 1 lb puff pastry
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper.
- Seer the beef in a hot pan until browned on all sides.
- Cook mushrooms until moisture evaporates, then let cool.
- Spread pâté over the beef.
- Wrap beef in mushrooms and pastry.
- Brush with egg wash.
- Bake at 400°F for 25-30 minutes.
- Let rest before slicing.

- Serve with a red wine sauce.
- Allow beef to cool before wrapping.
