Ingredients

  • 1 can (15 oz) of white beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until tender.
  2. Once roasted, let the beets cool, then peel and dice them.
  3. In a large mixing bowl, combine the diced beets, white beans, red onion, and parsley.
  4. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Serve chilled or at room temperature, garnishing with additional parsley if desired.
