Ingredients

- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans and corn.
- Add diced red bell pepper and chopped red onion.
- Stir in cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Let it sit for at least 30 minutes before serving.

- Use fresh corn if available for better flavor.
- Adjust lime juice to your taste.
