Ingredients

  • 1 red bell pepper, diced

  • 2 tablespoons olive oil

  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans and corn.
  2. Add diced red bell pepper and chopped red onion.
  3. Stir in cilantro.
