Description
A delicious blueberry cream cake from Nova Scotia.
Ingredients

- 2 cups all-purpose flour
- 1 ½ cups sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugar.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract.
- In another bowl, combine flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fold in blueberries gently.
- Pour batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool completely.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Spread whipped cream over the cooled cake.
- Garnish with additional blueberries.
Notes
- Use fresh blueberries for the best flavor.
- Store in the refrigerator if not consumed immediately.
- Can be served with a drizzle of blueberry sauce.
