A refreshing and healthy quinoa salad with feta cheese.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit covered for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine cooled quinoa, tomatoes, cucumber, bell pepper, red onion, and feta cheese.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour the dressing over the salad and toss to combine.
  9. Chill in the refrigerator for at least 30 minutes before serving.
