Ingredients

- 4 chicken thighs
- 1 cup rice
- 1 onion, chopped
- 2 cups chicken broth
- 1 can cream of mushroom soup
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, garlic powder, and paprika.
- Brown the chicken on both sides in the skillet.
- Add chopped onion and sauté until soft.
- Stir in the cream of mushroom soup and chicken broth.
- Bring to a simmer and cover, cooking for 25 minutes.
- Meanwhile, cook rice according to package instructions.
- Serve chicken and sauce over rice.

- Substitute brown rice for added fiber.
