Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot; sauté until soft.
  5. Stir in carrots and potatoes.
  6. Add beef back to the pot.
  7. Pour in beef broth and add tomato paste, thyme, bay leaf, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  9. Remove bay leaf before serving.
