Ingredients

- 1 small head of green cabbage, shredded
- 1 small head of purple cabbage, shredded
- 2 large carrots, grated
- 1 cup vegan mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon celery seed
- Salt and pepper to taste
Instructions
- In a large bowl, combine the green cabbage, purple cabbage, and carrots.
- In a separate bowl, mix together the vegan mayonnaise, apple cider vinegar, maple syrup, celery seed, salt, and pepper.
- Pour the dressing over the cabbage mixture.
- Toss well to combine all ingredients.
- Refrigerate for at least 30 minutes before serving.
Notes
- This coleslaw can be made a day in advance.
- Adjust the sweetness by adding more or less maple syrup.
- For added crunch, consider adding sunflower seeds or nuts.
