Ingredients

  • 1 cup black beans, soaked overnight
  • 1 cup rice
  • 1 pound sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse and drain soaked black beans.
  2. In a pot, cook sausage until browned. Remove and set aside.
  3. Sauté onion and garlic in the same pot until soft.
  4. Add black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for about 20 minutes or until rice is cooked.
  7. Stir in sausage and cook for an additional 5 minutes.
  8. Serve hot.
