Instructions

  1. Rinse the black eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Drain the peas and add them to the pot.
  5. Add water, salt, pepper, bay leaf, and smoked paprika.
  6. Bring to a boil, then reduce heat and simmer for 1 hour, or until peas are tender.
  7. Remove bay leaf before serving.
