Description
A hearty dish made with black eyed peas.
Ingredients

- 1 cup black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
- 1 teaspoon smoked paprika
Instructions
- Rinse the black eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Drain the peas and add them to the pot.
- Add water, salt, pepper, bay leaf, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 1 hour, or until peas are tender.
- Remove bay leaf before serving.
Notes
- Soaking peas overnight reduces cooking time.
- Adjust seasoning to taste.
- Serve with rice or cornbread.
