A simple and hearty black eyed peas recipe.
Ingredients

- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas under cold water.
- In a pot, add water and black eyed peas. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic. Cook until softened.
- Add cooked peas, salt, pepper, paprika, and bay leaf to the skillet.
- Cook for another 10 minutes, stirring occasionally.
- Remove bay leaf before serving.
Notes
- Soak peas overnight for faster cooking.
- Adjust seasonings to taste.
- Serve with rice or cornbread.
