Instructions

  1. Rinse the black eyed peas under cold water.
  2. In a pot, add water and black eyed peas. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic. Cook until softened.
  6. Add cooked peas, salt, pepper, paprika, and bay leaf to the skillet.
  7. Cook for another 10 minutes, stirring occasionally.
  8. Remove bay leaf before serving.
